This is a remarkable guide to lavish entertaining, replete with unusual as well as familiar recipes, written and compiled by two prominent San Antonians, Ruth R. Pace and Irene Huenefeld. Ms. Huenefeld was an artist, and designed and illustrated this attractive book; she is also known as the author of the exhaustive International Directory of Historical Clothing. This guide to cooking and entertaining presupposes inexperience combined with extreme ambition on the part of the reader: no knowledge is assumed and included are tables for substitutions and equivalent measures; a glossary of food terms and also of kitchen utensils; an oven temperature guide; an explanation of "Preparation and Cooking Processes;" and of course many menus for every kind of well-described event. (Information is even given for the traditional time of arrival of guests and how long they should stay.) For example, the cocktail party or open house menu recommends radish roses, a tempting walnut liver pate, Epernay champagne punch, among many other choices; afternoon tea menus provide recipes for six different kinds of ribbon sandwiches, not to mention shrimp, watercress, cucumber & other sandwiches, cheese straws, and poulet stuffed mushrooms, and does not omit a few sweet confections; a morning coffee is less formal and the menus include more pastries; and then there's brunch with garlic cheese grits, banana cow, jambon cressons, baked tomato halves, etc., etc. Then on to luncheons, "casual" buffets, "semi-formal" buffets, sit-down dinners, and bang-up Thanksgiving and Christmas dinners with scampi crepes, pumpkin-rum Bermuda souffle, Cornish hens grenadine... and lots of lined pages for notes, none of them yet marked., Huenefeld], Hearst Books.
